Pumpkin Roll

Ok, this is NOT my recipe... I do not claim it as my own. I got it from another momma! Now i LOVE to bake so when this recipe came through my email i just HAD to try it!

Pumpkin roll

3 eggs beat on high for 5 mins
1 cup sugar
1 teaspoon lemon juice
2/3 cup pumpkin (large can will make 5 pumpkin rolls)

3/4 cup flour
1 teaspoon baking powder
2 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
mix and fold into pumpkin mix
spread on 11x17 cookie sheet jelly roll pan GREASED and Floured ( we line with wax paper first then grease and flour)
sprinkle 1 cup of nuts optional
bake 15 mins
at 375
as soon as it gets out flip onto towel sprinkled with powered sugar and roll.. COOL..

when completely cool unroll

Mix 1 cup powered sugar 1/4 cup butter 6ounces cream cheese until smooth.. spread on cooled roll and reroll..wrap well.. chill or freeze
